Elegant Eggs on Toast

Ingredients
8 large eggs ½ cup whole milk ½ teaspoon table salt ⅛ teaspoon ground black pepper 1 tablespoon unsalted butter ¼ cup minced fresh chives 4 ounces goat cheese 8 slices pumpernickel bread, toasted1 ⅓ cups fresh arugula leaves 4 slices smoked salmon
Instructions
- Beat eggs, milk, salt, and pepper in bowl until uniformly yellow. Meanwhile, heat butter in medium nonstick skillet over high heat until foam subsides. Pour in egg mixture and, using rubber spatula, push eggs from one side of pan to other side, lifting and folding eggs until they form single mound but remain shiny and wet, 1 1/2 to 2 minutes. Transfer to medium bowl and toss with chives.
- Spread cheese on 4 slices toast, then layer each with arugula and 1 slice salmon. Spoon eggs over salmon and top with remaining 4 slices toast. Serve.
