Aromatic Curried Couscous for Two

Ingredients

1 tablespoon extra-virgin olive oil 1 medium shallot, minced (about 3 tablespoons)1 small clove garlic, minced (about ½ teaspoon)½ teaspoon curry powder ¾ cup low-sodium chicken broth 3 tablespoons raisins ½ cup plain couscous 2 tablespoons minced fresh mint 1 ½ teaspoons fresh lime juice

Before You Begin

If you prefer, replace the mint with cilantro or parsley.

Instructions

  1. Heat the oil in small saucepan over medium-high heat. Add the shallots and cook until softened, about 2 minutes. Stir in the garlic and curry powder and cook until fragrant, about 15 seconds. Stir in the broth and raisins. Bring to a boil.
  2. Stir in the couscous and remove the pot from the heat. Cover and let stand for 5 minutes. Fold the mint and lime juice into the couscous. Season with salt and pepper to taste.
