Garlic-Herb Crackers

Ingredients

Pita bread, lavash, flour tortillas, or bagelsOlive oil 3 garlic cloves, smashedChopped fresh thyme, basil, or oregano

Before You Begin

These crackers are made from ingredients that may already be lurking in your kitchen. Spare pita bread, lavash, tortillas, and even day-old bagels can be transformed into crackers that would put the most renowned cracker manufacturer to shame.

Instructions

  1. Cut pita bread, lavash, or flour tortillas into bite-size wedges or slice bagels thinly into rounds. Arrange on a large baking sheet. Heat the oil in a skillet and add garlic cloves. Stir for 30 seconds and remove from heat. Stir in chopped herbs. Just before baking, brush the crackers with the oil (don't use too much or they'll taste greasy), leaving behind the garlic cloves. Bake in a 350-degree oven, flipping the crackers over halfway through baking, until they are golden and fully toasted, about 12 minutes. Allow to cool before serving. These crackers are best served the same day they are prepared.

Why This Recipe Works

For our easy homemade crackers recipe, we turned pita bread, lavash, tortillas, and even thin-cut bagels into crisp crackers by brushing them with garlic and herb-infused oil and baking. A light brushing of olive oil was all that was necessary—too much oil and the crackers were oil-soaked and burnt around the edges. A moderate oven crisped the bread evenly without any excessive browning. Even at a moderate temperature, we found we got the best results when we flipped the crackers midway through.
