6 tablespoons unsalted butter 2 garlic cloves, minced to paste¼ teaspoon table salt 1 teaspoon lemon juice
Before You Begin
A rasp-style grater makes quick work of turning the garlic into a paste. If desired, the garlic can be strained from the sauce before serving.
Instructions
- Melt butter in 8-inch skillet over medium-low heat. Add garlic and 1/4 teaspoon salt and season with pepper to taste; cook, stirring constantly, until fragrant, about 3 minutes. Remove skillet from heat and let stand 3 minutes. Stir in lemon juice and serve.

Why This Recipe Works
We briefly cook the garlic in the butter to mellow its flavor, then add the lemon juice off heat to preserve its acidic punch.
