Kentucky-Style Vinegar Slaw

Kentucky-Style Vinegar Slaw

Ingredients

1 (14-ounce) bag shredded green and red coleslaw mix ½ cup finely chopped onion 1 carrot, peeled and shredded1 cup distilled white vinegar ½ cup sugar 1 tablespoon vegetable oil Salt and pepper

Before You Begin

Shred the carrot on the large holes of a box grater.

Instructions

  1. Combine coleslaw mix, onion, and carrot in large bowl. Bring vinegar, sugar, oil, 1 teaspoon salt, and 1/2 teaspoon pepper to simmer in small saucepan over medium heat, stirring to dissolve sugar. Once simmering, pour hot vinegar mixture over coleslaw mixture and toss to combine.
  2. Refrigerate until fully chilled and coleslaw mix is wilted, about 2 hours. Season with salt and pepper to taste. Serve, using slotted spoon.
