Smoked Turkey and Pepper Jack Panini

Ingredients

⅓ cup mayonnaise 2 teaspoons minced canned chipotle chile in adobo sauce2 shallots, sliced thin2 teaspoons lime juice ¼ teaspoon salt 2 tablespoons unsalted butter, softened8 slices hearty white sandwich bread 8 ounces thinly sliced pepper Jack cheese 8 ounces thinly sliced deli smoked turkey ½ cup cilantro leaves

Before You Begin

If you have a panini maker, feel free to use it here.

Instructions

  1. Whisk mayonnaise and chipotle together in bowl. Toss shallots, lime juice, and salt together in separate bowl.
  2. Spread butter over 1 side of each bread slice. Place bread, buttered side down, on cutting board. Spread each slice with chipotle mayonnaise. Place 1 slice pepper Jack on each of 4 bread slices, then top each with 2 slices turkey, cilantro leaves, shallot mixture, and 1 of remaining 4 slices pepper Jack. Top with remaining 4 bread slices, buttered side up.
  3. Heat grill pan or large nonstick skillet over medium heat for 1 minute. Place 2 sandwiches in pan and weigh down with Dutch oven. Cook sandwiches until golden brown and cheese is melted, about 2 minutes per side. Repeat with remaining 2 sandwiches. Serve.
