Smoked Turkey and Pepper Jack Panini

Ingredients
⅓ cup mayonnaise 2 teaspoons minced canned chipotle chile in adobo sauce2 shallots, sliced thin2 teaspoons lime juice ¼ teaspoon salt 2 tablespoons unsalted butter, softened8 slices hearty white sandwich bread 8 ounces thinly sliced pepper Jack cheese 8 ounces thinly sliced deli smoked turkey ½ cup cilantro leaves
Before You Begin

Instructions
- Whisk mayonnaise and chipotle together in bowl. Toss shallots, lime juice, and salt together in separate bowl.
- Spread butter over 1 side of each bread slice. Place bread, buttered side down, on cutting board. Spread each slice with chipotle mayonnaise. Place 1 slice pepper Jack on each of 4 bread slices, then top each with 2 slices turkey, cilantro leaves, shallot mixture, and 1 of remaining 4 slices pepper Jack. Top with remaining 4 bread slices, buttered side up.
- Heat grill pan or large nonstick skillet over medium heat for 1 minute. Place 2 sandwiches in pan and weigh down with Dutch oven. Cook sandwiches until golden brown and cheese is melted, about 2 minutes per side. Repeat with remaining 2 sandwiches. Serve.
