1 mango, peeled, pitted, and cut into ¼-inch pieces1 shallot, minced3 tablespoons juice from 2 limes 2 tablespoons chopped fresh mint 1 jalapeño chile, stemmed, seeds reserved, and minced1 tablespoon extra-virgin olive oil 1 garlic clove, minced½ teaspoon salt

Adjust the salsa's heat level by adding the reserved jalapeño seeds, if desired.
