Neiman Marcus (Inspired) Dip

Before You Begin
The dip needs to sit for at least 2 hours to allow the flavors to meld. It gets better the longer it sits. We recommend using Frank’s RedHot Original Cayenne Pepper Sauce in this recipe. Serve with Ritz crackers, Fritos corn chips, or apple slices.
Instructions
- Cook bacon in 12-inch nonstick skillet over medium heat until crispy, 5 to 7 minutes. Using slotted spoon, transfer bacon to paper towel–lined plate; let cool for 5 minutes.
- Stir cheddar, mayonnaise, almonds, scallions, hot sauce, and bacon in bowl until thoroughly combined. Cover and refrigerate for at least 2 hours or up to 2 days. Serve.

Why This Recipe Works
Our inspiration for this dip was the beloved classic created at the Zodiac Restaurant at the Neiman Marcus flagship store in Dallas in 1953. For the creamy base, we combined mayonnaise and extra-sharp shredded cheddar cheese. For crunch, we added bacon that we cut into 1/2 inch pieces and fried until crisp in a skillet. And for even more crunch, we added 1/2 cup toasted silvered almonds. Bright chopped scallions added some freshness while 2 teaspoons of Frank’s RedHot Original Cayenne Pepper Sauce added a subtle amount of heat. Then comes the hard part—letting the dip chill for 2 hours to let the flavor blend.
