Tortellini in Broth with Spinach

Ingredients
3 tablespoons unsalted butter 1 small onion, mincedSalt and pepper 1 garlic clove, minced6 cups chicken broth 1 tablespoon soy sauce 6 ounces cheese tortellini 3 ounces (3 cups) baby spinach 2 ounces Parmesan cheese, grated (1 cup)
Before You Begin
Our favorite supermarket tortellini is Barilla Three Cheese Tortellini.
Instructions
- Melt butter in large saucepan over medium heat. Add onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until softened but not browned, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add broth and soy sauce and bring to boil over high heat. Stir in pasta and cook until al dente. Off heat, stir in spinach and Parmesan. Serve.
