Tortellini in Broth with Spinach

Ingredients

3 tablespoons unsalted butter 1 small onion, mincedSalt and pepper 1 garlic clove, minced6 cups chicken broth 1 tablespoon soy sauce 6 ounces cheese tortellini 3 ounces (3 cups) baby spinach 2 ounces Parmesan cheese, grated (1 cup)

Before You Begin

Our favorite supermarket tortellini is Barilla Three Cheese Tortellini.

Instructions

  1. Melt butter in large saucepan over medium heat. Add onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until softened but not browned, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
  2. Add broth and soy sauce and bring to boil over high heat. Stir in pasta and cook until al dente. Off heat, stir in spinach and Parmesan. Serve.
