About this Class

Most folks leave baguettes and brioche to the pros at the bakery, but making these French loaves in your own kitchen can be incredibly rewarding—not to mention delicious. In this class we’ll take a deep dive into bread-making ingredients and techniques, learning about the science of yeast and processes like autolyse, fermentation, and proofing. We’ll talk about the equipment you’ll need to make these breads—mostly common kitchen tools with a few specialized gadgets thrown in—and which kinds of flour you’ll want to keep on hand. Bridget Lancaster is the co-host of the America's Test Kitchen and Cook's Country cooking shows and has been an original cast member since the inception of the shows. She began her career at ATK as a test cook for Cook's Illustrated and was part of the founding team for Cook's Country magazine. She helped to launch the America's Test Kitchen Online Cooking School (now ATK Classes) as the lead instructor, and was a regular contributor to America's Test Kitchen Radio. Bridget also co-created, produced, and hosted the award-winning Proof podcast.
