It’s also the dessert my best friend has requested for her birthday every year since I introduced her to it. It was my college boyfriend’s favorite. And it’s the one dish I will have on the table at every barbecue I host.

Chocolate Eclair Cake
Despite its name, chocolate eclair cake is neither an outsize éclair nor a baked cake; it more closely resembles an easy, classic icebox cake. Most recipes call for making a creamy mixture using pudding mix and Cool Whip and layering that with graham crackers and canned chocolate frosting. I’ve had those versions, and they are quite delicious.
But our recipe is on another level.

Start by making a creamy pudding with a deep dose of vanilla flavor. Next, whip cream and fold in gelatin to create a lovely texture that is creamy yet light and ethereal. To finish, layer this luscious cream filling with graham crackers and top the whole thing with a homemade (yet ultra-easy) chocolate ganache frosting.
