These sweet, nutrient-packed little orbs are perfect for eating out of hand, and they also add pops of flavor to all kinds of desserts, from pies, tarts, and cakes to cobblers and grunts. Blueberry Cakes and Baked Goods
Blueberry Jam Cake
One of our most popular blueberry dessert recipes is our Blueberry Jam Cake. This stunning layer cake has a homemade blueberry jam filling that is made by processing fresh blueberries with jam and pectin and then simmering the mixture on the stove until thickened. A little lemon juice stirred in at the end adds some acidity to counter the sweetness.
Most of the jam is layered between white cake rounds, and a little is reserved to color and flavor the cream cheese frosting. By dividing the frosting into three bowls and adding different amounts of jam to each, you create different shades of purple, which allows the cake to be frosted with an ombré effect (gradient shades of color). This showstopper is perfect for any summer gathering.

Blueberry Cream Pie
A traditional double-crust blueberry pie is nice, but if you really want to wow your guests on a summer evening, then it’s our Blueberry Cream Pie you’re looking for. This easy pie starts with a sweet, crisp graham cracker crust. The filling celebrates fresh blueberries, highlighting their flavor by cooking some of them down into a puree and stirring the rest in whole for juicy pops throughout the pie. Whipped cream fortified with cream cheese makes for a topping that holds up well. And adding a little of the blueberry puree to the piping bag with the topping is the perfect way to create blueberry-streaked swirls on top of the pie.
Easy Apricot and Blueberry Tart
Our Easy Apricot and Blueberry Tart is rustic but beautiful in its simplicity. The tart dough comes together quickly in the food processor, and after a chill to firm it up, you simply roll it out into a large circle. Then you’ll toss sliced apricots, a whole cup of blueberries, and a little sugar together and pile the mixture in the middle of the dough round. Fold the dough up around the fruit, pleating it as you go, and then pop the whole thing into the oven to bake. There’s something so pleasing (and so summery!) about the contrast of the blueberries against the orange apricots. And the sweet blueberries complement the slight tartness of the apricots too.

Summer Blueberry Cobbler
One of the easiest blueberry desserts to whip up is a Summer Blueberry Cobbler. It’s also one of the most homey and comforting blueberry desserts you can make. For ours, we combined blueberries with cornstarch (for thickening), sugar, lemon zest and juice, and a little salt and then cooked the filling.
The biscuit dough is simple to stir together and has a bit of buttermilk for tang and lots of butter for richness. We dolloped the dough on top of the hot blueberry filling, sprinkled the mounds with sugar, and then baked it all until we had golden-brown biscuits over bubbling blueberry juices. A scoop of vanilla ice cream on the side just screams summer.

Dessert doesn't have to be difficult to make. We top this simple summery cobbler with fluffy stir-and-drop buttermilk biscuits.

Texas-Style Blueberry Cobbler is nothing like a traditional cobbler, such as the one above with biscuits baked over a blueberry filling. A Texas-style blueberry cobbler is made with a thick batter similar to pancake batter, and the fruit actually goes on top instead of underneath. We pour the batter into a baking dish and then mash the blueberries with a mixture of sugar and lemon zest. Then we dollop the mashed blueberries on top and sprinkle on a little more of the lemon sugar before baking the whole thing. As the cobbler bakes, the batter puffs up and the fruit sinks in, so there are jammy pockets of fruit throughout.

Well-known in Surry County, North Carolina, sonker is a dessert that falls somewhere between a pie and a cobbler. It is a deep dish of stewy cooked fruit, topped with a crisp cake. We call ours Lazy Blueberry Sonker because it doesn’t take much effort at all to make it. To make it, you just toss the blueberries with sugar, salt, water, and cornstarch and then bake them until bubbling. Then you make the simple cake batter, pour it over top, and return the dish to the oven until the top is golden brown. Just another great way to combine warm blueberries and buttery cake!

Last but not least is our Blueberry Grunt, which doesn’t really sound like a food at all, but it is. A grunt is fruit cooked on the stovetop under dumpling dough. It’s perfect if you are looking for something cobbler-like but don’t want to turn on your oven. For a juicy fruit mixture, we cook down half the blueberries and then stir the rest in. Then we mix up the dumpling dough and use an ice cream scoop to spoon it over the warm blueberries. To cook the dumplings, we cover the pot and simmer the whole thing until they are puffy and then we sprinkle some cinnamon sugar on top. So warm. So comforting.
Blueberry Grunt
This oddly named dessert promises juicy berries topped with biscuity dumplings-and there's no need to turn on the oven. But it can easily become a soggy, bland mess.
