Why This Recipe Works
In eastern North Carolina, the barbecue sauce should have a vinegary punch, a bit of spiciness, and plenty of salt. It’s thin enough to soak into finely chopped barbecued pork. Whisking together cider vinegar, Texas Pete hot sauce, salt, pepper, and red pepper flakes gave us a tangy base while some brown sugar balanced the heat.
