Preserved Peach Snack Cake

Preserved Peach Snack Cake

Ingredients

1 (14-ounce) can sweetened condensed milk ½ cup whole milk 8 tablespoons unsalted butter, melted1¼ cups (6¼ ounces/177 grams) all-purpose flour 2 teaspoons baking powder ½ teaspoon table salt 1 pint Preserved Peaches in Syrup, drained and cut into ½-inch wedges2 tablespoons sugar

Before You Begin

Serve with vanilla ice cream or whipped cream.

Instructions

  1.  Adjust oven rack to upper-middle position and heat oven to 350 degrees. Grease 8-inch square baking dish. Whisk condensed milk, whole milk, and melted butter together in large bowl. Whisk flour, baking powder, and salt together in separate bowl. Stir flour mixture into condensed milk mixture until just combined.
  2.  Pour batter into prepared dish. Arrange peaches in even layer on top of batter. Sprinkle sugar evenly over batter and peaches.
  3.  Bake until deep golden brown and toothpick inserted in center comes out clean, about 45 minutes. Transfer dish to wire rack and let cake cool in dish for 10 minutes. Serve warm.

Why This Recipe Works

After minimal prep work, we topped this stir-together batter with the sliced peaches and sprinkled it with sugar to give it a gorgeous browned crust once baked.
