An Italian-style dressing and fresh basil breathe new life into an easy slaw. Use a chef's knife or the shredding disk on a food processor to prepare the cabbage.
Instructions
- Combine cabbage, pepper, and basil in large bowl. Whisk vinegar, honey, 1/2 teaspoon salt, and 1/8 teaspoon pepper together in small bowl until honey has dissolved. Whisk in oil, pour dressing over cabbage, and toss well. Adjust seasonings with salt and pepper. Serve.

Why This Recipe Works
Bored with classic, mayonnaise-rich coleslaw recipes, we wanted a lighter option with a brighter flavor. We found that coleslaws can be just as good with an olive-oil-based vinaigrette as they are with mayonnaise, and from there came up with our Red Cabbage Slaw recipe. An Italian-inspired vinaigrette sweetened with balsamic vinegar and honey paired perfectly in our Red Cabbage Slaw recipe. Fresh herbs like basil added big flavor and visual appeal with a minimum of effort. Bell pepper could be sliced thin and adds sweet flavor to the cabbage.
