Grape-Nuts Banana Bread

Ingredients

1 ¾ cups (8¾ ounces/248 grams) all-purpose flour 1 cup (7 ounces/198 grams) sugar ¾ cup Grape-Nuts cereal 1 tablespoon baking powder ½ teaspoon salt 1 cup mashed banana ½ cup whole or low-fat milk 2 tablespoons vegetable oil 1 large egg

Instructions

  1. Adjust oven rack to middle position and heat oven to 350 degrees. Grease 9-inch loaf pan. Combine flour, sugar, Grape-Nuts, baking powder, and salt in large bowl. Whisk banana, milk, oil, and egg in medium bowl until smooth. Stir wet ingredients into flour mixture until combined.
  2. Scrape batter into prepared pan. Bake until golden brown and toothpick inserted into center comes out clean, 45 to 55 minutes. Cool bread in pan for 15 minutes, then turn out onto wire rack. Serve warm or at room temperature. (Bread can be stored in airtight container at room temperature for 3 days.)

Why This Recipe Works

New Englanders have long enjoyed Grape-Nuts pudding, but we wondered how the cereal would do in other applications—like Grape-Nuts Banana Bread. Overripe bananas were key when making the bread. The browner they were, the better the finished bread tasted. Tasters preferred toasting the bread and then spreading the slices with butter instead of eating it plain.
