Smothered Boneless Pork Ribs

Ingredients
1 teaspoon onion powder ½ teaspoon paprika ½ teaspoon salt ½ teaspoon pepper 2 pounds boneless country-style pork ribs, trimmed¼ cup vegetable oil 1 onion, halved and sliced thin2 garlic cloves, minced½ teaspoon minced fresh thyme 1 cup beef broth 1 teaspoon cider vinegar
Before You Begin
Serve with egg noodles or mashed potatoes.
Instructions
- Combine onion powder, paprika, salt, and pepper in bowl. Pat pork dry with paper towels and season with spice mixture. Heat 2 tablespoons oil in 12-inch skillet over medium-high heat until just smoking. Add pork and cook until well browned, about 4 minutes per side; set aside on plate.
- Add remaining 2 tablespoons oil and onion to now-empty skillet. Cover and cook, stirring occasionally, until onion is soft and golden brown, about 6 minutes. Add garlic and thyme and cook until fragrant, about 30 seconds. Add broth and bring to boil. Return pork to pan, cover, and reduce heat to low. Cook until tender, about 15 minutes. Transfer pork to platter. Stir vinegar into sauce and spoon over pork. Serve.
