Grilled Turkey Pitas with Cucumber Salad

1 cucumber, peeled, halved lengthwise, seeded, and sliced thin4 ounces feta cheese, crumbled (1 cup)½ cup pitted kalamata olives, chopped, plus 2 teaspoons brine¼ cup mayonnaise 4 scallions, white and green parts separated and sliced thinSalt and pepper 1 ½ pounds ground turkey 2 tablespoons chopped fresh oregano 2 (8-inch) pita breads, halved
Before You Begin
Making a divot in the center of each burger lets the burgers cook up flat.
Instructions
- Combine cucumber, 1/4 cup feta, olives and brine, mayonnaise, and scallion greens in bowl. Season with salt and pepper to taste. Knead turkey, oregano, remaining 3/4 cup feta, scallion whites, 1 teaspoon salt, and 1/2 teaspoon pepper together in second bowl. Shape turkey mixture into 4 (1/2-inch-thick) oval patties and press shallow divot in center of each.
- Grill over medium-hot fire until burgers register 160 degrees, 5 to 7 minutes per side. Transfer to plate. Grill pita bread until warmed through, about 30 seconds per side. Place 1 burger in each pita along with one-quarter of cucumber salad. Serve.
