The best silicone brushes are comfortable to hold and easy to use, letting you do everything from spreading melted butter or egg wash on dough to glazing meats with sauces. Our winner is the OXO Good Grips Silicone Pastry Brush. Its bristles apply liquids in a controlled but gentle fashion, and it has a grippy, nicely sized handle that’s comfortable to hold. It had minor durability issues that were purely aesthetic, and it was overall a great performer.
In the kitchen, we use brushes for all kinds of tasks: basting, glazing, and spreading melted butter or egg wash, to name just a few. The bristles on these brushes come in two materials—natural fiber (typically boar’s hair) and silicone—and we like each type for different reasons. Natural-fiber pastry brushes are especially good at picking up liquids and distributing them gently and evenly; we use them for pastry and other tasks where control and a delicate touch are critical. Silicone brushes don’t pick up as much liquid as their natural-fiber counterparts, and they are a little rougher on delicate foods. But they never shed bristles and are heat-resistant to high temperatures. They are also much easier to clean; since they’re typically dishwasher-safe, they’re easier to sanitize after using with raw meat or egg, for example. We recommend them for basting meat or poultry with glaze or marinade and for greasing hot pans. We looked for silicone brushes that were about 6 to 9 inches in total length, the size that we find the easiest to use for most kitchen tasks.
Silicone brushes come in handy for everything from applying egg wash to pastries to brushing melted butter or adding glazes or sauces to meat.
What to Look for
- Broad Head: We preferred brushes with heads that measured about 1.5 inches across. These provided the most even, efficient coverage, letting us apply all the glaze or egg wash in fewer strokes than brushes with narrow heads.
- Moderately Flexible Bristles: We found that brushes with moderately flexible bristles allowed us to apply liquids exactly where we wanted them, as when brushing egg wash to make an attractive pie crust.
- Moderately Sized, Grippy Handle: We liked handles measuring about 5 inches long. These were short enough that we could control the brush head well for precise applications of egg wash or glaze but long enough for hands of all sizes to hold comfortably. We also liked handles that were moderately thick, measuring about 2.75 inches in circumference. These were easiest for both users with large and small hands to hold for long periods of time. Material mattered too: We preferred handles made from silicone or rubbery plastic, which helped us get a grip on the tools even when they got a little slick from butter or glaze.
- Light Weight: Brushes that were relatively light (under 2 ounces) were the most comfortable to use for long periods of time.
What to Avoid
- Narrow Head: Brushes with heads measuring less than 1.5 inches wide were a little too small, taking longer to evenly cover a surface with egg wash, glaze, or melted butter.
- Floppy or Rigid Bristles: Bristles that were too floppy were harder to control and direct, dripping and flicking liquid a little bit more than we liked. Bristles that were too rigid were rougher and less agile, sometimes even poking holes in delicate foods.
The Tests
- Brush egg wash onto pie dough
- Brush glaze onto meatloaf
- Brush melted butter onto hot cast-iron skillet
- Leave brushes in hot skillet; examine for damage
- Leave brushes in slurry of garlic and chipotle in adobo sauce; wash 6 times, examining for odors and stains
- Have users of different hand sizes, dominant hands, and levels of pastry experience test brushes
- For each test, weigh mass of liquid picked up by each brush
How We Rated
- Durability: We tested how well the brushes stood up to high heat and retained stains and odors.
- Performance: We rated the brushes on how well they spread liquids on different types of foods and the attractiveness of their strokes.
- Ease of Use: We evaluated the brushes on how easy they were to maneuver and clean and how comfortable they were to hold.
