Onion Relish for Curry

Serves 4 (Makes about 1 cup)
Ingredients
1 Vidalia onion, finely diced (about 1 cup) (see note above)½ teaspoon sweet paprika 1 tablespoon fresh lime juice ½ teaspoon sugar Pinch cayenne pepper ⅛ teaspoon table salt
Before You Begin
If using a regular yellow onion, increase the sugar to 1 teaspoon. The relish can be refrigerated in an airtight container for 1 day. This is exceptionally good with curry.

Why This Recipe Works
We preferred sweet Vidalia onions for our onion relish recipe, but you can use regular yellow onions and increase the amount of sugar for a similar result.
