Top Pick

WinnerUSA Pan 12-Cup Muffin Tin

This pan produced beautiful muffins. They released easily from the pan, even with no liners, and the pan was a breeze to hand-wash, thanks to the nonstick coating. Within the recipe’s suggested time range, the muffins were well-baked, with browned bottoms and perfectly crispy, golden tops. There was plenty of room around the edges for us to grab with oven mitts, making it easy to rotate the pan in the oven and to remove it when finished.

What You Need to Know

The best muffin tins are easy to use and make beautiful muffins and cupcakes. Our top pick is the USA Pan 12-Cup Muffin Pan. It’s relatively inexpensive and has broad edges that are roomy enough to grab while wearing oven mitts. Muffins released easily and were golden brown with an attractive round shape.

If you want to make muffins or cupcakes, you’re going to need a muffin tin. There’s simply no other way to produce lofty blueberry muffins with crispy, craggy edges or tall cupcakes with smooth, rounded tops. But you shouldn’t stop there. A muffin tin can be a stand-in for a popover pan, facilitate making baked doughnuts, or even enable cute, personal-size breakfast buttercups. Whether you’re baking with kids or tackling more ambitious baked goods, a muffin tin is essential in a well-rounded arsenal of baking equipment.

Muffins tins are, of course, great for muffins and cupcakes, but they’re also the perfect vessel for savory snacks like muffin tin frittatas.

What to Look for

  • Spacious Edges: We’ve all been there. Wearing oven mitts, you reach into the oven to rotate a muffin tin and you accidentally poke the batter, denting the top and yielding an unsightly muffin. Our favorite muffin tins had plenty of space around the exterior, allowing us to grab the edges with mitts or side towels without disturbing the muffins themselves.

We preferred muffin tins with plenty of room along the edges to grab with mitts (left). With less spacious tins, we risked disturbing the muffins.

  • Standard Well Size: There are no official dimensions or capacities for muffin tin wells, but we found that the majority were in a similar size range—about 2¾ inches in diameter and 1½ inches deep and a little less than a half-cup in volume. Most muffin recipes work best with muffin tins of this size, so you can count muffins being attractive and well proportioned. When we used tins with smaller wells, the tops of the muffins spread out and joined together, forming a giant muffin top that we had to gently cut apart.

There aren’t standard dimensions for muffin tin wells, but we found that most recipes work best with wells that were about 2¾ inches in diameter and 1½ inches deep. Smaller wells yielded short, stout muffins (right).
  • Nonstick Coating: A picture-perfect muffin is no good if you can’t get it out of the pan in one piece. Most of the tins in our lineup had nonstick coatings. We tested all of the pans without liners; with nonstick-coated pans, finished muffins released effortlessly and didn’t stick at all.

Nonstick coatings also led to significant performance differences. In the two pans that lacked coatings, muffin bottoms turned out pale and appeared underbaked, even once the tops had reached a nice level of browning. To investigate further, we photographed the pans using an infrared camera. We found that uncoated pans behave like mirrors, reflecting heat away, while the coatings on the nonstick pans diminish their reflectiveness, allowing them to absorb more infrared heat energy. That in turn led to better browning on the parts of the muffin that were in direct contact with the pan.

We photographed an uncoated pan from Fox Run (left) and a coated pan from OXO (right) using an infrared camera. We found that uncoated pans reflected heat away, while the nonstick pans absorbed more infrared heat energy.

What to Avoid

  • Cramped Edges: A few pans in our lineup had very little space between the wells and the edges of the pan. There was nothing to hold on to when getting the tins in and out of the oven, so it was difficult to avoid accidentally poking our oven mitt or the edge of a side towel into the batter.
  • No Nonstick Coating: If you buy a muffin tin without a nonstick coating, you should always use liners. Even though we sprayed the tins with cooking spray, our baked goods stuck and were hard to remove in one piece. Pans without nonstick coatings also absorbed less heat and led to pale, underbaked muffin bottoms. Note: Using these pans with paper cupcake liners would create even less browning, as the paper blocks heat from conducting directly from the metal to the food.

Muffins baked in uncoated pans were pale and looked underbaked (left), while muffins baked in pans with nonstick coatings were golden brown and evenly baked through (right).

The Tests

  • Bake popovers
  • Bake blueberry muffins
  • Hand-wash each pan after every use
  • Photograph pans of different materials with infrared camera

Williams-Sonoma Goldtouch Nonstick Muffin Pan, 12-Well

This muffin tin performed nearly identically to our top pick, but it’s more expensive. Muffin bottoms browned just a little less deeply but were still nicely golden. The nonstick coating meant we were able to remove muffins with ease. This pan had about an inch and a half of room on either side of the wells to grab with oven mitts, so we had no trouble rotating the pan or removing it from the oven.

GreenLife Ceramic Nonstick Muffin Pan

This muffin tin made beautiful, tall muffins with rounded tops. The ceramic nonstick coating prevented sticking and allowed us to easily remove finished muffins. There was plenty of room along the sides to hold the edges with mitts or towels. This pan comes in a range of pretty hues. We have some concerns about the durability of the ceramic nonstick coating and the color on the bottom of the pan—both were already rubbing off on a few edges.

OXO Non-Stick Pro Ceramic Coated Metal Bakeware 12 Cup Muffin Pan

This muffin tin produced attractive muffins, but by the time the tops were golden, the bottoms got a little too dark. This may be due to the pan’s dark-colored exterior, which absorbs more heat than light-colored pans. It’s still capable of producing perfect muffins, but if you buy this pan, just be sure to check on your muffins a little early. It was the roomiest pan in our lineup, with almost two more inches of flat metal around the edges than our top picks. We appreciated the space to hold on to, but it was almost overkill and requires extra space in a cabinet. It was also the heaviest pan in our lineup, but at 3 pounds, it wasn’t too much trouble to lift in and out of the oven. After a few uses, the blue color was already rubbing off on the bottom of the pan, so we have some concerns about its long-term durability.

Nordic Ware Naturals 12 Cavity Muffin Pan

This was the only aluminum pan in our lineup, and it lacked a nonstick coating. We found that pans without coatings absorb and emit less heat, so when the tops of the muffins were golden brown and a toothpick inserted into their middles came out clean—two standard signs of doneness—the sides and bottoms of the muffins remained pale. Both popovers and muffins occasionally stuck to the pan, making it difficult to shimmy them out without ruining their appearance and making it harder to clean. It was one of the smallest pans in the lineup, and its wells had the smallest capacities, producing stout muffins with tops that spread together and formed one big muffin top. There was also very little room along the edges to grab the tin without disturbing the muffins.

Fox Run Stainless Steel Muffin Pan 12 Cup

One of two uncoated pans in our lineup, this tin produced muffins with very light-colored bottoms that looked underdone, even though the tops were golden brown and the centers were fully cooked. We found that pans without coatings absorb and emit less heat, creating pale, underbaked results. Both muffins and popovers stuck to the pan a little and were difficult to remove, so you’d need to use liners to avoid sticking and more-difficult cleanup. This pan was quite small, and its wells were similarly petite, so muffins were shorter and the tops spread and stuck together.
