Ingredients

2 cups long grain white rice 1 tablespoon unsalted butter 3 cups water 1 teaspoon salt

Before You Begin

White rice is the traditional accompaniment for gumbo. Rinsing the rice, which removes much of the exterior starch, produces the lightest, fluffiest result. Lundberg Organic Long-Grain White Rice is the test kitchen's taste-test winner.

Instructions

  1. RINSE RICE Place rice in fine-mesh strainer set over large bowl. Rinse under running water until water runs clear, about 1 minute. Drain rice well.
  2. TOAST RICE Melt butter in large saucepan over medium heat. Add rice and cook, stirring frequently, until edges begin to turn translucent, about 2 minutes. Add water and salt and bring to boil.
  3. SIMMER RICE Cover, reduce heat to low, and simmer until liquid is absorbed and rice is tender, about 20 minutes. Off heat, remove lid and place kitchen towel over saucepan. Cover and let stand for 10 minutes. Fluff with fork. Serve.

Why This Recipe Works

White Rice is one of those dishes that is easy to make, but which can be very difficult to make perfectly. We rinsed the rice to remove excess starch and prevent the grains from clumping together. Toasting the rice before we boiled it enhanced the flavor.
