Homemade pancakes are so easy to make, there's really no need for a box mix. Here's the basic method.
You have the ingredients in your pantry. The time differential to make from-scratch pancakes versus measuring out ingredients from a box is minimal, but the flavor differential is vast. It begs the question: why would you buy boxed pancake mix to make a sub-par pancake when you can make a great pancake from scratch with the same amount of effort? The steps are simple, and following them correctly yields picture-perfect (and delicious) pancakes every time!
Whisk dry ingredients together in bowl.
Whisk eggs and fat together in another bowl.
Whisk liquid components into egg mixture.
Gently stir or fold wet ingredients into dry ingredients so that lumpy pockets of flour remain.
Let batter rest before cooking so that unmixed pockets hydrate slightly; batter will fall from spoon in clumps rather than streaming off in thin ribbons.
