Gorgonzola Vinaigrette

Ingredients

2 tablespoons white wine vinegar 2 teaspoons Dijon mustard ½ teaspoon kosher salt ⅛ teaspoon pepper ¼ cup extra-virgin olive oil 2 ounces Gorgonzola cheese, crumbled (½ cup)1 small shallot, sliced thin2 tablespoons chopped fresh parsley

Before You Begin

For a creamier texture, buy a wedge of Gorgonzola cheese instead of a precrumbled product. This sauce pairs perfectly with our Bacon-Wrapped Filets Mignons.

Instructions

  1. Whisk vinegar, mustard, salt, and pepper together in bowl. Slowly whisk in oil until emulsified. Stir in Gorgonzola, shallot, and parsley.
