Quick Tartar Sauce

Ingredients
¾ cup mayonnaise 3 tablespoons minced cornichons plus 1 tablespoon brine1 scallion, minced1 small shallot, minced1 tablespoon capers, rinsed and minced½ teaspoon pepper
Before You Begin
Be sure to rinse the capers.

- Combine all ingredients in small bowl. Cover with plastic wrap and refrigerate until flavors meld, about 15 minutes.

Why This Recipe Works
While jarred tartar sauce is a kitchen convenience, its flavors aren’t as bright and and it is often too sweet. For our recipe, we flavored the mayonnaise base with minced cornichons (along with the brine they come in), scallion, shallot, and capers.
