Instructions
- Heat oil and garlic in 10-inch skillet over medium heat, stirring frequently, until fragrant but not browned, about 2 minute. Stir in tomatoes and simmer until slightly thickened, about 5 minutes. Stir in basil and sugar and season with salt to taste.

Why This Recipe Works
Our fast but full-flavored version of this Italian staple comes together in less than 10 minutes. We briefly sautéed garlic in olive oil in a large skillet (its large surface area promoted speedy evaporation so the sauce cooked quickly) and then added canned crushed tomatoes and simmered the sauce for about 5 minutes. We then stirred in fresh basil and seasoned the sauce with salt and a touch of sugar (to balance acidity).
