Ingredients

6-8 dried arbol chiles, stemmed1 ½ tablespoons coriander seeds 1 ½ tablespoons cumin seeds 1 tablespoon fenugreek seeds1 ½ teaspoons black peppercorns 1 whole clove 1 teaspoon cayenne pepper 1 teaspoon paprika ½ teaspoon ground cinnamon

Before You Begin

For a spicier curry powder, use the larger amount of chiles.

Instructions

  1. Process arbols, coriander seeds, cumin seeds, fenugreek seeds, peppercorns, and clove in spice grinder until finely ground, about 30 seconds. Stir in cayenne, paprika, and cinnamon.
