6-8 dried arbol chiles, stemmed1 ½ tablespoons coriander seeds 1 ½ tablespoons cumin seeds 1 tablespoon fenugreek seeds1 ½ teaspoons black peppercorns 1 whole clove 1 teaspoon cayenne pepper 1 teaspoon paprika ½ teaspoon ground cinnamon
Before You Begin
For a spicier curry powder, use the larger amount of chiles.
Instructions
- Process arbols, coriander seeds, cumin seeds, fenugreek seeds, peppercorns, and clove in spice grinder until finely ground, about 30 seconds. Stir in cayenne, paprika, and cinnamon.
