Why This Recipe Works

Anchovies play a subtle but unmistakably helpful supporting role in many recipes. We missed the savory, funky umami qualities that anchovies brought to some of our favorite vegan and plant-based recipes. So we developed this vegan substitute, finding that we could use 1 teaspoon anchovy substitute to replace either 1 anchovy fillet or ½ teaspoon anchovy paste.
