Toaster-Oven Beef and Vegetable Kebabs

Before You Begin
Sirloin steak tips, also called flap meat, are sold as whole steaks, cubes, and strips. To ensure uniform pieces, we like to purchase whole steak tips and cut them ourselves. You will need three 12-inch or five 6-inch skewers for this recipe; if using wooden skewers, soak in water for at least 15 minutes.
Instructions
- Microwave 4 teaspoons vegetable oil, ginger, and pepper flakes in large bowl until fragrant, about 30 seconds, stirring once halfway through microwaving. Whisk in sesame oil, soy sauce, honey, and orange zest until combined.
- Adjust toaster oven rack to middle position, select highest broiler function, and heat broiler. Set small wire rack in small rimmed baking sheet. Measure out and reserve 2 tablespoons oil mixture. Toss beef with remaining oil mixture.
- Cut onion from pole to pole into 4 even wedges; discard thin inner core. Cut each wedge crosswise into 3 pieces. Toss onion, mushrooms, and zucchini with salt and remaining 2 teaspoons vegetable oil together in bowl, then thread vegetables in alternating pattern on two 12-inch skewers or three 6-inch skewers. Thread beef on one 12-inch skewer or two 6-inch skewers.
- Arrange skewers on prepared rack and broil until vegetables are tender and spotty brown and meat registers 120 to 125 degrees (for medium-rare) or 130 to 135 degrees (for medium), 8 to 12 minutes, flipping skewers halfway through broiling.
- Transfer skewers to serving platter, tent with aluminum foil, and let rest for 5 minutes. Whisk reserved oil mixture and orange juice to recombine and season with salt and pepper to taste. Drizzle skewers with sauce and serve.

Whether you cook beef and vegetable kebabs on the grill or in the toaster oven, resist the urge to put meat and vegetables on the same skewer. While it looks pretty, meat and vegetables can cook at different rates and having them on separate skewers means you can pull the veggies as soon as they are tender and spotty brown, while the meat continues to cook to your desired doneness. For juicy chunks of beef, we chose well-marbled steak tips. A ginger-soy marinade added exciting flavor, and we reserved some for a final sauce; mixing it with orange juice made a bright accompaniment to our warm kebabs.
