Toaster-Oven Beef Satay with Peanut Dipping Sauce

1 pound flank steak, trimmed 2 tablespoons soy sauce 2 tablespoons vegetable oil 2 tablespoons packed dark brown sugar 2 tablespoons minced fresh cilantro 2 scallions, sliced thin1½ tablespoons ketchup 1 garlic clove, minced½ teaspoon srirachaSpicy Peanut Dipping Sauce
¼ cup peanut butter (creamy or chunky)2 tablespoons hot water, plus extra as needed1½ tablespoons lime juice 1 scallion, sliced thin1 tablespoon ketchup 1½ teaspoons soy sauce 1½ teaspoons packed dark brown sugar 1½ teaspoons minced fresh cilantro ¾ teaspoon sriracha 1 garlic clove, mincedBefore You Begin
Covering the exposed ends of the skewers with a strip of aluminum foil protected them from burning. To make the steak easier to slice, freeze it for 15 minutes. You will need twenty 6-inch wooden skewers.
Instructions
- Slice beef against grain ¼ inch thick (you should have at least 20 slices).
- Combine soy sauce, oil, sugar, cilantro, scallions, ketchup, garlic, and sriracha in medium bowl; add beef; and toss to combine. Cover and refrigerate for 15 minutes. Weave 1 beef slice evenly onto each skewer, leaving at least 1 inch at bottom of skewer exposed (Skewers can be refrigerated for up to 24 hours.)
- Whisk peanut butter and hot water together in medium bowl. Stir in lime juice, scallion, ketchup, soy sauce, sugar, cilantro, sriracha, and garlic. Adjust consistency with extra hot water as needed; set aside for serving.
- Adjust toaster oven rack to middle position, select broiler function, and heat broiler. Set small wire rack in aluminum foil–lined small rimmed baking sheet and spray rack with vegetable oil spray. Arrange skewers in two rows across width of prepared rack with all exposed skewer ends facing center of rack. Cover skewer ends in center of sheet with strip of foil and secure by crimping tightly at edges. Broil skewers until beef is no longer pink on top, 2 to 3 minutes. Flip skewers and continue to broil until beef is fully cooked and spotty brown, 4 to 6 minutes. Serve with peanut sauce.

Why This Recipe Works
To up the convenience, we brought the satay indoors for a simple, satisfying appetizer from the toaster oven. A marinade of brown sugar, soy sauce, ketchup, and sriracha guaranteed moist, flavorful meat while the intense, direct heat of the toaster oven’s broiler approximated a grill. Our peanut dipping sauce had sweet, tart, and spicy elements that echoed the marinade for a mouthwatering finish.
