Tamatya-Kandyachi Koshimbir (Tomato-Onion Salad)

Ingredients

4 large, firm tomatoes, cored and cut into ¼-inch dice½ teaspoon table salt 1 Thai green chile, slicedPinch sugar 1 large onion, chopped fine¼ teaspoon ground cumin 2 tablespoons grated fresh coconut (optional)2 tablespoons chopped fresh cilantro (optional)

Before You Begin

If you are not fond of raw onion, substitute ¼ cup of crushed peanuts.

Instructions

  1. Stir tomatoes, salt, Thai chile, and sugar together in bowl. Let sit for 5 minutes to allow flavors to meld. Stir in onion and cumin. Serve, garnishing with coconut and cilantro, if using.
