Air-Fryer Roasted Leeks with Almonds, Dried Cherries, and Balsamic Vinaigrette

Before You Begin
If using an air-fryer lid for a multicooker, pour the water directly into the pot in step 1; if using an air-fryer oven, pour the water onto the drip tray. This recipe can be easily doubled; do not increase the water in step 1.
Instructions
- Cut each leek half in half crosswise and wash thoroughly, taking care to keep layers intact. Toss pieces gently with 1 teaspoon oil in bowl and sprinkle with ⅛ teaspoon salt. Pour boiling water into bottom of air-fryer drawer, then arrange leeks cut side down in basket (leeks may overlap slightly). Set temperature to 375 degrees and cook until leeks are very tender and well browned, 14 to 18 minutes, flipping leeks halfway through cooking.
- Transfer leeks to serving platter and season with salt and pepper to taste. Whisk vinegar, pepper, remaining 1 tablespoon oil, and remaining ⅛ teaspoon salt together in small bowl. Drizzle vinaigrette over leeks and sprinkle with almonds and dried cherries. Serve warm or at room temperature.

Why This Recipe Works
Roasting the leeks at 375 degrees and adding some boiling water to the air-fryer base helped retain the vegetable's moisture, keeping it tender. Washing the leeks just before cooking trapped some water between the layers, helping them steam from the inside. A balsamic vinaigrette, almonds, and dried cherries really elevated the dish. Look for leeks that are 1 to 1¼ inches in diameter at the base; they are more tender. If using larger leeks, peel away the outer layers to achieve the correct size. For an accurate measurement of boiling water, bring a kettle of water to a boil and then measure out the desired amount.
