Tear trimmed oyster mushrooms into 1- to 1½-inch pieces. Stem shiitake mushrooms; quarter large caps and halve small caps. Cut trimmed maitake (hen of the woods) mushrooms into 1- to 1½-inch pieces. This recipe can be easily doubled.
Instructions
- Toss mushrooms with 1 tablespoon oil, ⅛ teaspoon salt, and pepper in large bowl; arrange in even layer in air-fryer basket. Place basket into air fryer and set temperature to 400 degrees. Cook until mushrooms are softened, 8 to 12 minutes, tossing halfway through cooking.
- Stir shallot into mushrooms. Return basket to air fryer and cook until mushrooms are well browned, 2 to 4 minutes.
- Whisk lemon juice, thyme, remaining 1 tablespoon oil, and remaining ⅛ teaspoon salt together in now-empty bowl. Add mushroom mixture and toss to coat. Season with salt and pepper to taste. Serve.

Why This Recipe Works
Air-frying allowed us to use less oil and prevented the mushrooms from losing too much liquid, as they might in a skillet. These tender roasted mushrooms pair beautifully with beef, fish, and tofu; can be served with other sides such as potatoes; and make a great topping for salads or bruschetta. To prevent the shallot from burning, we gave the mushrooms a head start, roasting them until they were softened and then adding the shallot for the final few minutes, until the mushrooms were well browned (but still juicy) and the shallot was softened and lightly browned. Meanwhile, we made an aromatic dressing to toss the cooked mushroom mixture in. Use a single variety of mush-room or a combination. Stem and halve portobello mushrooms and cut into ½-inch pieces. Trim white or cremini mushrooms; quarter them if they're large or medium or halve them if they're small.
