Air-Fryer Roasted Sweet Potato Wedges

Ingredients

1 pound small sweet potatoes (8 ounces each), unpeeled, cut lengthwise into 1½-inch wedges1 tablespoon extra-virgin olive oil ¼ teaspoon table salt ¼ teaspoon ground black pepper

Before You Begin

We prefer to use small potatoes, about 8 ounces each, because this ensures that the wedges fit more uniformly in the air-fryer basket; they should be of similar size so that they cook at the same rate. Be sure to scrub and dry the whole potatoes thoroughly before cutting them into wedges and tossing them with the oil and spices.

Instructions

  1. Toss all ingredients together in bowl and arrange in even layer in air-fryer basket. Place basket into air fryer and set temperature to 350 degrees. Cook until lightly browned and tender, 20 to 25 minutes, tossing halfway through cooking. Serve.

Why This Recipe Works

Sweet potatoes release a sweet, syrupy liquid as they cook, and this turned the wedges mushy. The key was to leave the sweet potatoes unpeeled and cut them into wide wedges so that they would hold their shape while roasting. This worked well because the skins are delicious, and they're also rich in vitamins, minerals, and fiber. Cut thinner, the wedges burned before their interiors had the chance to cook through. Since sweet potatoes have plenty of flavor on their own, we limited the seasoning to salt, pepper, and a little olive oil to encourage browning. After about 20 minutes in the air fryer, the sweet potatoes were perfectly creamy and sweet on the inside, with plenty of crunch on the outside.
