Air-Fryer Roasted Potatoes with Parsley, Lemon, and Garlic

Ingredients

1 pound small red or Yukon Gold potatoes, unpeeled, halved1 tablespoon extra-virgin olive oil ¼ teaspoon table salt ¼ teaspoon ground black pepper 1 tablespoon chopped fresh parsley 1 teaspoon grated lemon zest 1 small garlic clove, minced

Before You Begin

Use small potatoes measuring 1 to 2 inches in diameter.

Instructions

  1.  Toss potatoes with oil, salt, and pepper in bowl and arrange in even layer in air-fryer basket. Place basket into air fryer and set temperature to 400 degrees. Cook until potatoes are tender, well browned, and crisp, 25 to 30 minutes, tossing halfway through cooking.
  2.  Transfer potatoes to now-empty bowl and toss with parsley, lemon zest, and garlic until evenly coated. Season with salt and pepper to taste. Serve.

Why This Recipe Works

Keeping the skin on the potatoes provided more fiber. We also tossed the cut potatoes with oil and arranged them in the air-fryer basket, where they fit snugly in a single layer. Shaking the basket halfway through roasting ensured that the browning was even. Tossing the potatoes with parsley, lemon zest, and garlic after they were cooked prevented the parsley from burning in the air fryer and allowed us to disperse the ingredients more evenly over the potatoes.
