Super Açai Smoothie

Ingredients

1 cup ice 1 (3.5-ounce) package frozen açai puree 6 ounces cauliflower florets, cut into 1-inch pieces (2 cups)1 ripe banana, peeled and halved crosswise1 cup pomegranate juice

Before You Begin

Frozen açai puree is often sold in the freezer section with other fruits. Running the frozen package under warm water for 30 seconds makes it easier to remove the fruit from the packaging and blend it.

Instructions

  1. In order listed, add all ingredients to blender and process on low speed until mixture is combined but still coarse in texture, about 10 seconds, scraping down sides of blender jar as needed. Gradually increase speed to high and process until completely smooth, about 90 seconds. Adjust consistency with water as needed. Serve.

Why This Recipe Works

Açai berries, which grow on palm trees in South America, are loaded with vitamins and antioxidants but have no sugar. When we tasted them raw, they were incredibly tart but intensely berryish, and that reminded us of that puckering flavor you find in pomegranate juice. This ended up being a perfect addition to our smoothie because we needed added liquid for blending but wanted to keep that sweet-tart, berry flavor. That pairing is potent (and not bulky enough for a full smoothie), so we balanced it with neutral cauliflower, which mellowed the flavors without diminishing their appeal. Our last ingredient was the ever-versatile banana, which contributed creamy sweetness that softened the sharp flavor of the berries for a profile that is sweet and fruity enough to enjoy a whole glass.
