Minty Melon Smoothie

Ingredients

1 cup ice 10 ounces 1-inch honeydew pieces (2 cups)4 ounces cucumber, cut into 2-inch pieces (1 cup)¼ cup fresh mint leaves ¾ cup plain dairy or plant-based yogurt ½ cup water, plus extra as needed

Instructions

  1. In order listed, add all ingredients to blender and process on low speed until mixture is combined but still coarse in texture, about 10 seconds, scraping down sides of blender jar as needed. Gradually increase speed to high and process until completely smooth, about 1 minute. Adjust consistency with extra water as needed. Serve.

Why This Recipe Works

We knew we wanted to include cucumber because of its subtle flavor and additional liquid thanks to its high water content. When considering other ingredients, we remembered the South American combination of melon and mint. Ripe honeydew melon blended with the crisp cucumber for a hydrating and slightly sweet flavor profile, while fresh mint leaves (though small in quantity) contributed a stimulating taste that accented the sweet melon and enhanced the refreshing cucumber. Thanks to the cucumber liquid, we needed only a small amount of additional water to get this smoothie mixing in the blender to our desired texture. Adding yogurt and ice created a more cohesive and cooling base for the flavors to meld into an invigorating drink.
