- In order listed, add all ingredients to blender and process on low speed until mixture is combined but still coarse in texture, about 10 seconds, scraping down sides of blender jar as needed. Why This Recipe Works
Through testing, we found that coconut milk from a can provided the richest coconut flavor when compared against chunks of coconut, coconut water, and coconut milk from a carton. Pineapple chunks proved to be the best way to impart the much-needed pineapple flavor because juice was too liquidy, and the frozen fruit also provided a nice chill. Zucchini had such subtle flavor that it blended in as a neutral background and bulked up the base without masking the tropical flavor. Plus, it left beautiful flecks of green throughout (so there was no need to peel). This smoothie is reminiscent of its inspired cocktail, so you can feel good drinking it, knowing that you're getting fruit, a vegetable, and delicious enjoyment. You won't even miss the rum.
