- Soak goji berries in ½ cup warm water in blender for at least 5 minutes or overnight.
- Add grapefruit, strawberries, salt, and yogurt to blender (in that order) and process on low speed until mixture is combined but still coarse in texture, about 10 seconds, scraping down sides of blender jar as needed. Gradually increase speed to high and process until completely smooth, about 2 minutes. Adjust consistency with extra water as needed. Serve.

Why This Recipe Works
Goji berries are a small but mighty fruit that is often overlooked; they resemble cherry tomatoes when fresh and red raisins when dried. Vitamin-rich and antioxidant-loaded, goji berries are most easily found in their dried form, and they taste like a cranberry or sour cherry. For smoother consistency when blending, we rehydrated the goji berries in warm water and then reserved the soaking liquid, full of berry goodness, to use in our smoothie. Combining that tart flavor with sweet frozen strawberries, which made our smoothie cold, and citrusy fresh red grapefruit, which acted like fruit juice but with more fiber, gave us a refreshing, superfood smoothie. We then needed only a pinch of salt and a dollop of yogurt to balance out the drink's bright intensity.
