Simple Peach Salsa

Ingredients
2 ripe but firm peaches, pitted and chopped coarse1 small red bell pepper, cored, seeded and sliced thin1 small red onion, sliced into long, thin slices¼ cup chopped fresh parsley leaves 1 medium clove garlic, minced¼ cup pineapple juice 6 tablespoons lime juice from 3 medium lime1 medium jalapeño chile or other medium hot pepper, minced
Before You Begin
If you don't have peaches, substitute any yellow-orange fruit, including mangoes, pineapples, or papaya.
Instructions
- Mix all ingredients, including salt and pepper to taste, in medium bowl. Cover and refrigerate to blend flavors, at least 1 hour or up to 4 days.
