Honey-Soy Steak Tips with Roasted Green Beans

1 pound green beans, trimmed3 tablespoons vegetable oil, divided1 teaspoon table salt, divided¾ teaspoon pepper, divided¼ cup honey 3 tablespoons soy sauce 3 garlic cloves, minced1 teaspoon cornstarch ¼ teaspoon red pepper flakes 2 pounds sirloin steak tips, trimmed and cut into 2-inch chunks3 scallions, sliced thin on bias
Before You Begin
Sirloin steak tips are often sold as flap meat. Serve with rice.
Instructions
- Adjust oven rack to middle position and heat oven to 450 degrees. Toss green beans, 1 tablespoon oil, ¼ teaspoon salt, and ¼ teaspoon pepper together on rimmed baking sheet. Roast until tender, about 15 minutes.
- Meanwhile, whisk honey, soy sauce, garlic, cornstarch, and pepper flakes in bowl until cornstarch is fully dissolved. Sprinkle steak tips with remaining ¾ teaspoon salt and ½ teaspoon pepper. Heat remaining 2 tablespoons oil in 12-inch nonstick skillet over medium-high heat until just smoking. Add steak tips and cook until browned on all sides and meat registers 120 to 125 degrees (for medium-rare), about 7 minutes. Transfer steak tips to plate.
- Add honey mixture to fat remaining in skillet and cook over medium-high heat until mixture is thickened and glossy, about 1 minute. Off heat, return steak tips and any accumulated juices to skillet and toss to coat. Serve, sprinkled with scallions.
