Apple–Celery Root Salad

Ingredients
¼ cup cider vinegar ¼ cup mayonnaise 1 tablespoon whole grain mustard 2 Granny Smith apples, cored and cut into 2-inch-long matchsticks1 small celery root, peeled and cut into 2-inch-long matchsticks2 ounces (2 cups) baby arugula, roughly chopped2 tablespoon capers, chopped
Instructions
- Whisk vinegar, mayonnaise, and mustard together in large bowl. Add apples, celery root, arugula, and capers and toss to combine. Season with salt and pepper to taste. Serve.

Why This Recipe Works
Slicing the celery root thin and cutting the apple into matchsticks made the pieces easy to spear with a fork. Spiking the mayonnaise with cider vinegar, whole-grain mustard, and capers produced a rich, yet bright and tangy slaw.
