Aperol Sour

Ingredients

1½ ounces London dry gin 1 ounce egg white ¾ ounce lemon juice ¾ ounce Simple Syrup ½ ounce Aperol ⅛ teaspoon orange bitters

Before You Begin

You can garnish with extra orange bitters, if desired.

Instructions

  1. Add 1½ ounces London dry gin, 1 ounce egg white, ¾ ounce lemon juice, ¾ ounce simple syrup, ½ ounce Aperol, and ⅛ teaspoon bitters to cocktail shaker and vigorously shake until mixture is foamy, about 45 seconds.
  2. Fill shaker with ice, then shake mixture until fully combined and well chilled, about 15 seconds. Double-strain cocktail into chilled cocktail glass. Serve.

Make this cocktail and you’ll see why Aperol is the perfect liqueur for receiving the sour treatment. The beloved Italian aperitif features a beguiling mix of the flavors of sweet and bitter oranges, bitter roots and herbs, and a touch of rhubarb. It reminds us of the flavor of grapefruit, minus the acidity. Here we give the drink a base of aromatic gin, add acid with lemon juice, and turn it creamy and smooth with the addition of a shaken egg white.
