Why This Recipe Works

The Negroni is considered a classic aperitivo, even though the addition of gin makes it stronger than many other cocktails in this category. It has a distinct and enjoyably crisp bitterness that pairs perfectly with such savory and piquant appetizers as olives and cheese—and this is how it’s often enjoyed, predinner, throughout Italy.
