Chimichurri Wing Sauce

Chimichurri Wing Sauce

Ingredients

1⅓ cups fresh parsley leaves ⅔ cup fresh cilantro leaves ½ cup extra-virgin olive oil 3 tablespoons red wine vinegar 6 garlic cloves, minced1 tablespoon capers 2 teaspoons dried oregano 1 teaspoon kosher salt ½ teaspoon red pepper flakes

Before You Begin

This sauce also goes great on steaks, grilled pork or chicken, fish, and roasted vegetables.

Instructions

  1. Process 1⅓ cups parsley leaves, ⅔ cup cilantro leaves, ½ cup extra-virgin olive oil, 3 tablespoons red wine vinegar, 6 minced garlic cloves, 1 tablespoon capers, 2 teaspoons dried oregano, 1 teaspoon kosher salt, and ½ teaspoon red pepper flakes in blender until finely pureed, about 30 seconds, scraping down sides of blender jar as needed. Toss wings with sauce in large bowl. Serve.

Why This Recipe Works

Loads of fresh parsley and cilantro, plus garlic, dried oregano, capers, red wine vinegar, and red pepper flakes make up the bulk of this pureed herb sauce, which we balanced and emulsified with fruity extra-virgin olive oil.
