Harissa Tomato and Chickpea Spaghetti

Harissa Tomato and Chickpea Spaghetti

Ingredients

1½ pounds cherry tomatoes 1 (15-ounce) can chickpeas, rinsed1 red onion, sliced thin4 garlic cloves, smashed and peeled⅓ cup coarsely chopped oil-packed sun-dried tomatoes ¼ cup mild harissa ¼ cup extra-virgin olive oil, plus extra for drizzling1½ teaspoons kosher salt, plus salt for cooking pasta12 ounces spaghetti 5 ounces (⅔ cup) whole-milk ricotta cheese ⅓ cup Parmesan cheese, grated, plus extra for serving

Before You Begin

Use hot harissa for a spicier dish. We love the rich flavor sundried tomatoes bring to the dish, but it’s also OK to omit them.

Instructions

  1. Adjust oven rack to middle position and heat oven to 425 degrees.
  2. Toss 1½ pounds cherry tomatoes, 1 rinsed can chickpeas, 1 thinly sliced red onion, 4 smashed and peeled garlic cloves, ⅓ cup coarsely chopped oil-packed sun-dried tomatoes, ¼ cup mild harissa, ¼ cup extra-virgin olive oil, and 1½ teaspoons kosher salt together in 13 by 9-inch baking dish until evenly coated. Roast until vegetables are tender and mixture is jammy, 30 to 40 minutes. Mash garlic with fork and stir into vegetable mixture.
  3. Meanwhile, bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and 12 ounces spaghetti and cook until al dente. Reserve ½ cup cooking water, then drain pasta. 
  4. Add pasta, ⅔ cup whole-milk ricotta, and ⅓ cup grated Parmesan to baking dish with roasted vegetables and toss to combine, adding reserved cooking water as needed to loosen sauce. Serve, drizzling with extra oil and sprinkling with extra Parmesan.

Why This Recipe Works

This quick, satisfying weeknight pasta relies on bold, pantry-friendly ingredients. Tomatoes, chickpeas, red onion, and garlic are roasted in a mixture of olive oil and harissa until tender, creating a rich, jammy sauce to toss with the pasta. Sun-dried tomatoes add an intensely flavorful umami boost. Timing the pasta to finish as the vegetables come out of the oven ensures everything comes together seamlessly.
