Savory Caramel–Black Pepper Noodles with Pork

Ingredients

8 ounces ground pork ⅛ teaspoon baking soda ¼ cup sugar 2 tablespoons vegetable oil 1 shallot, sliced thin1 (2-inch) piece ginger, peeled and cut into matchsticks2 garlic cloves, sliced thin1 teaspoon coarsely ground pepper 3 tablespoons fish sauce 4 (3-ounce) packages instant ramen noodles, seasoning packets discarded

Before You Begin

This dish would also be excellent with fresh lo mein noodles, if you can find them; use 1 pound of noodles and increase the cooking time in step 4 to 6 minutes. Garnish with scallions, cilantro, sliced cucumbers, and/or sliced Thai chiles.

Instructions

  1. Bring 4 quarts water to boil in large pot. Toss 8 ounces ground pork, 2 teaspoons water, and ⅛ teaspoon baking soda in bowl until thoroughly combined.
  2. Place ¼ cup sugar in 12-inch skillet and shake to spread into even layer. Add 2 tablespoons vegetable oil and cook over medium-high heat, without stirring, until sugar begins to change color, 2 to 3 minutes. Continue to cook, stirring occasionally, until sugar is color of honey, 15 to 30 seconds. (Oil will begin to smoke.) Reduce heat to medium and continue to cook, stirring occasionally, until sugar bubbles vigorously and is color of soy sauce, about 1 minute longer.
  3. Immediately add pork mixture; 1 thinly sliced shallot; 1 (2-inch) piece ginger, peeled and cut into matchsticks; 2 thinly sliced garlic cloves; and 1 teaspoon coarsely ground pepper and cook, breaking up meat with wooden spoon, until pork is well browned, 3 to 5 minutes. Stir in ¼ cup water and 3 tablespoons fish sauce and bring to boil. Cook until liquid thickens slightly, about 2 minutes, then remove skillet from heat.
  4. Add 4 (3-ounce) packages instant ramen noodles, seasoning packets discarded, to boiling water and reduce heat to maintain very gentle simmer. Cook, stirring occasionally, until almost tender, about 3 minutes.
  5. Using tongs, transfer noodles to skillet with pork mixture. Cook, tossing constantly, over  medium heat until noodles absorb most of sauce, about 2 minutes. Serve.

Why This Recipe Works

Vietnamese caramel-braised pork (thịt kho) gets its deep, savory-sweet backbone from nước màu, a dark caramel sauce cooked until the sugar turns bitter-edged and complex rather than sweet. We borrowed that technique for a fast weeknight noodle dish. Heating the sugar with oil until it reaches the color of soy sauce gives us a caramel with real depth and almost no sweetness; adding the aromatics directly to the hot caramel lets them bloom in the fragrant base. Tossing the ground pork with a little baking soda keeps it tender and helps it brown without drying out. A bit of fish sauce stirred in at the end lends a salty-funky note, and a full teaspoon of coarsely ground black pepper gives the dish its signature spicy bite. Cooking the noodles just shy of tender, then finishing them in the skillet, ensures every strand is coated with the sauce.
