4 ounces water 2 ounces lime juice 2 ounces simple syrup Pinch table salt 2½ teaspoons Foam Magic

5 ounces roasted broccoli, plus more for garnish4 ounces reposado or blanco tequila 1½ ounces lime juice 1½ ounces simple syrup

Before You Begin

Feel free to roast the broccoli however you like, or use our Roasted Broccoli recipe; just omit the salt and pepper. You can use store-bought simple syrup or make your own. Because you need a certain amount of volume for the cream whipper, this recipe yields enough salted lime foam for about 10 cocktails. The foam will hold in the fridge for 24 hours and can be used to top other cocktails. We developed this using a ½ liter/1 pint iSi cream whipper and 1 N₂O cartridge. Foam Magic, from Modernist Pantry, is a proprietary blend of methylcellulose and xanthan gum designed to turn almost any liquid into a stable foam when whipped in a blender or cream whipper. Note: The liquids for this recipe should be measured in fluid ounces; the roasted broccoli should be measured by weight.

Instructions

    for the salted lime foam

  1. Combine 4 ounces water, 2 ounces lime juice, 2 ounces simple syrup, pinch table salt, and 2.5 grams Foam Magic in blender and process until combined, about 15 seconds.
  2. Add mixture to base of cream whipper. Screw cap on cream whipper and charge with 1 N₂O cartridge. Shake cream whipper for 20 seconds. Refrigerate until chilled, about 30 minutes. (Salted lime mixture can be refrigerated for up to 24 hours).
  3. for the cocktail

  4. Muddle 5 ounces roasted broccoli, 4 ounces reposado tequila, 1½ ounces lime juice, and 1½ ounces simple syrup in cocktail shaker until broccoli is broken down, about 30 seconds.
  5. Fill with ice. Shake mixture until fully combined and well chilled, about 15 seconds. Double-strain cocktail into 2 chilled cocktail glasses. Shake cream whipper for 3 to 4 seconds. With cream whipper inverted, dispense foam until it measures 1 inch thick on top of cocktail. Serve, garnishing with additional roasted broccoli.

Why This Recipe Works

A broccoli cocktail sounds like a dare. And honestly, it started as one. We created this drink for I Changed My Mind with Dan Souza, where comedian Amber Ruffin, a self-proclaimed broccoli hater, challenged us to change her mind. The result is a cocktail that’s delicious first and surprising second. Roasting the broccoli before muddling it is the key move. Raw broccoli tastes sharp and vegetal, but roasting it with just a little oil concentrates its natural sweetness and adds a nuttiness that pairs well with the caramel notes of reposado tequila. Double-straining removes all the solids, resulting in a clean cocktail with complex flavor. A salted lime foam on top, made with a cream whipper and Foam Magic, a blend of stabilizers that turns almost any liquid into a foam, delivers acidity to balance the earthy base. And it adds a dramatic appearance that makes it look as interesting as it tastes.
