Peppermint Ice Cream Sandwiches

Ingredients

8 round red- and white-striped hard peppermint candies, crushed in food processor1 pint vanilla ice cream, slightly softened8 chocolate-glazed mini doughnuts, split in half horizontally

Before You Begin

These little ice cream sandwiches are great for after-school snacks as well as a fun family dessert.

Instructions

  1. Place crushed candy on small plate. Sandwich 3 tablespoons ice cream between cut sides of 2 doughnut halves, pressing halves so that ice cream extends just a bit beyond edges. Roll ice cream edges in peppermint to coat, sprinkle more peppermint in doughnut hole, then transfer sandwiches to large plate in freezer. Repeat with remaining doughnuts, ice cream, and candy. Freeze until firm, at least 2 hours. Wrap individually in plastic wrap and freeze for up to 1 week.

Why This Recipe Works

Our goal for Peppermint Ice Cream Sandwiches was a sandwich with rich, flavorful ice cream and a sturdy cookie base. Our recipe uses mini chocolate-coated doughnuts in place of more conventional cookies. To assemble the ice cream sandwiches, we spread softened vanilla ice cream between doughnut halves and coated the perimeter with crushed peppermint candies for bright flavor, color, and texture.
