Sweet and Spicy Fruit Salsa

Ingredients

1 jalapeno chile, seeded and chopped1 shallot, minced2 teaspoons cider vinegar 2 teaspoons honey 2 tablespoons extra-virgin olive oil 2 peaches (ripe), pitted and chopped fine2 plums (ripe), pitted and chopped fine1 tablespoon finely chopped fresh basil, finely chopped

Before You Begin

The salsa can be made up to 4 hours in advance- if left any longer, the fruit will become mushy. If you like your salsa spicy, don't seed the jalapeno.

Instructions

  1. Whisk jalapeno, shallot, vinegar, honey, and oil in small bowl. Let sit until flavors combine, about 15 minutes.
  2. Combine peaches and plums in large bowl. Add 1/2 cup of fruit to bowl with jalapeno mixture and mash with potato masher until smooth. Add mashed fruit mixture and basil to bowl with cut fruit and stir until combined. Season with salt and let sit until flavors combine, about 15 minutes. Serve.

Why This Recipe Works

A fruit salsa is a refreshing topping for grilled meat and fish. We wanted a recipe that produced the perfect combination of sweet, sour, and spicy flavors to complement the sweet fruit in a lively salsa. We found that fruity, tangy cider vinegar brought out the natural flavors of the plums and peaches in our recipe, while still keeping the salsa savory. Minced jalapeño and shallot offered welcome heat and pungency, and cool basil complemented both the hot and sweet elements. Mashing a portion of the fruit with a potato masher before adding it to the rest of the fruit and vinaigrette gave the final dish the consistency of a salsa rather than a relish.
